Using 300lbs of hand peeled citrus in every 1000L batch, expect a vibrant bouquet of citrus aromas from the blood orange, Lisbon lemon, Valencia orange, Bitter Orange, and Ruby grapefruit. The bittering elements include chinchona, rhubarb and gentian root. The concoction is macerated in spirit for 8 weeks before being filtered and bottled at 30 proof. If you want to cut your sugar AND your carbon footprint than this is an easy substitute in any classic Aperol spritz but has enough structure to be included in some more serious preparations.
